Espresso Chip Pancakes

The season of comfort food has arrived. In the mix of holiday dinners, we cannot forget about breakfast! There is nothing quite as cozy as waking up to a stack of fresh pancakes and hot coffee. What better way to upgrade the classic pancake than with some chocolate and espresso? These fluffy pancakes have Civilized Coffee Espresso Powder swirled right into the batter with chocolate chips sprinkled on top. Espresso Chocolate Chip Pancakes

YIELD: 4 large pancakes | Prep Time: 10 minutes | Cook Time: 10 minutes | Total Time: 20 minutes

INGREDIENTS

FOR THE PANCAKES:

  • 1 tablespoon Civilized Coffee Espresso Powder

  • 1 cup + 2 tablespoons all-purpose flour

  • 2 tablespoons powdered sugar

  • 1 pinch of salt

  • 1 cup buttermilk

  • 2 large eggs

  • 1/2 cup mini chocolate chips

FOR THE ESPRESSO GLAZE:

RECIPE

  1. Heat a griddle or large skillet over medium heat.

  2. In a medium bowl, whisk together Civilized Coffee Espresso Powder, flour, baking powder, sugar and salt. Create a well in the middle of the dry mixture and add the buttermilk and egg in. Stir the wet and dry ingredients until just combined. Do not over-mix!

  3. Melt 1 tablespoon of butter on the heated skillet. Scoop 1/4 cups of batter onto the surface in round heaps. Immediately sprinkle with mini chocolate chips.

  4. Let the pancakes cook until bubbles around the edges begin to pop. Check underside of the pancake for a medium golden brown. Flip the pancakes and cook another few minutes until done.

  5. While the pancakes cook, make the espresso glaze. Whisk together the Civilized Coffee Espresso Powder, powdered sugar and buttermilk until a runny and smooth sauce forms.

  6. When all pancakes are done cooking, stack on a plate and drizzle with the espresso glaze. Enjoy!
