Chocolate Espresso Donuts

There are certain undeniable joys of life: Coffee, chocolate, and donuts. It only makes sense to combine the three to create the ultimate morning treat. These chocolate espresso donuts feature baked mocha donuts and dark chocolate espresso ganache. Whip them up on a Sunday for the perfect weekend indulgence.

Chocolate Espresso Donuts

INGREDIENTS

DONUTS

  • 1 1/2 cup all-purpose flour

  • 1/2 cup cocoa powder

  • 1/3 cup light brown sugar

  • 2 teaspoons Civilized Coffee Espresso Powder

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 large egg

  • 1/3 cup plain yogurt

  • 1/3 cup whole milk

  • 1/3 cup vegetable oil

  • 1 teaspoon vanilla extract

GANACHE


RECIPE

DONUTS

  1. Grease a standard sized donut pan and set aside. Preheat oven to 350 degrees F.

  2. In a large bowl, combine the flour, cocoa powder, brown sugar, Civilized Coffee Espresso Powder, baking soda, baking powder, and salt. Set aside.

  3. In a small bowl, whisk together the egg, yogurt, milk, vegetable oil, and vanilla extract. Create a cavity in the dry ingredient bowl and add the wet ingredients in. Stir to combine, being careful to not over mix.

  4. Transfer the batter into a large Ziploc with a hole cut into the corner. Pipe batter into the donut molds, filling each mold 2/3 of the way.

  5. Bake for 12 minutes, or until knife inserted into the donut comes out clean. Allow to cool.

GANACHE

  1. While the donuts are cooling, make the chocolate ganache. In a double boiler over low heat, melt the chocolate and Civilized Coffee Espresso Powder- stirring often.

  2. The consistency should be thin enough to form a ribbon when you pull a spoon out of the mixture. If the chocolate is too thick, add the 1 teaspoon of coconut oil.

  3. Dip each donut into the ganache to make an even coating over the top half. Transfer to a cooling rack to set.

  4. Enjoy!
