Sourdough Brown Bread Recipe

Ingredients

236 g coffee water (dissolve 7 g of Espresso Powder in water)

120 g active sourdough starter

60 g honey
-
60 g molasses
-
42 g melted butter (cooled < 110 °F)

220 g bread flour
-
200 g whole wheat flour
-
60 g rye flour
-
24 g brown sugar
-
15 g cocoa powder
-
3 g Civilized Coffee Instant Espresso Powder
-
9 g salt
-
(Optional) rolled oats for topping
Directions
- Mix flours and coffee water in a medium bowl until a rough dough forms. Cover and rest 45 minutes.
- Combine the sourdough starter, honey, molasses, and melted butter in a separate bowl. (Make sure the butter has cooled to below 110°F — hotter butter can damage the starter.)
- Add sugar, cocoa, espresso powder, and salt to the dough. Gradually mix in wet ingredients until smooth (it will be sticky).
- First rise: Transfer dough to a lightly oiled bowl; cover and let rise 8–10 hours until doubled.
- Shape loaves: Divide, roll in oats if desired, place in loaf pans, and cover 2 hours. (Optional: refrigerate overnight for slow fermentation.)
- Bake: Preheat oven to 350 °F. Bake 30–35 minutes or until internal temp 195–200 °F.
- Cool and enjoy with butter, honey, or your favorite spread.
